Water Convolvulus (Kangkong or 蕹菜)

A common vegetable in Asian cuisine, very rich in dietary fibre & calcium. The USDA considers this an invasive weed so I do my part and plant it in a plastic container, away from the ditch and watch for flowers to avoid them seeding. The closest Asian store that sells this is 32 miles away so it’s only practical to grow some but carefully. (Irony: Invasive but so rare for purchase.)

ImageNice, green & fresh … stir fry … & they’ll still stay crunchy.
