Sweet Potato Donuts ~ that’s Kueh Keria. With so many sweet potatoes dug up and curing, I decided to make some good old Malay style doughnuts (US spelling Donuts), well, slightly modified since I do not like sugar-coating of any kind. Skin them, cut up and slow boil.
When done, mash them up, add self-raising flour laced with cinnamon, sugar & some butter. Mix away until dough-like. Then instead of deep-frying and coating with sugar, I put them in the oven and bake them for about 20 mins (nicely brown).
I love dripping some honey over and eating them with a nice cup of black sugarless coffee.
(Yes, I’m not a sugar maniac.)
