MY Quick Way to make Fried Bee Hoon (Rice Vermicelli)

I made a simple quick & easy Vermicelli dish and added some Sweet & Spicy Bringjal (Eggplant) in earlier post. I call this Home-Made Fast Food.

You’ll need:
1 portion fine Rice Vermicelli (Bee Hoon)
julienned/diced veggie which you like (carrots, cabbage, broccoli…)
bean sprouts (if you have any)
diced garlic (as much as you like)
1 tbsp sesame oil (for 1 serving)
pepper, soy sauce, tiny pinch of sugar
egg (optional)

Soak vermicelli for 10 mins
Heat sesame oil in wok or large pan
Add diced garlic
When fragrant, add all veggies & stir-fry for 1 min
Add vermicelli (slightly dripping with water) pepper, soy sauce & sugar
Mix thoroughly (split center & add egg if used)
Cover pan & allow steam to cook vermicelli (about 1 min)
Mix again (to get egg evenly distributed)
Serve & garnish with finely cut spring onions, parsley, fried shallots ~ whatever
you have and/or prefer. Goes well with leftovers.
(I squeeze Sriracha Sauce on top of mine, when on plate.)
