Do You Use Banana Leaves?

I love using Banana leaves as wraps for slow gentle grilling and steaming. Then, they go into the bokashi bucket or the compost drum. If the food wrapped is non-greasy – like a dessert – the leaf can even go into the worm bin.

In wrapping and then cooking/fermenting, banana leaves actually imparts  flavor to food. In areas where Banana trees do not/cannot grow, try going to an Asian shop. Chances are you’ll find some nice cleaned ones in the freezer, ready for use. Yes, I don’t just love to eat bananas, I love to cook and eat Banana flower buds & use their leaves as wraps and make leaf cups.

Last night I made Otak-Otak (Indonesian Nyonya leaf-wrapped fish cakes) and
the aroma from the grill did remind me of my late Mum and Oma (grandma)…
