Tonight, without New Year guests, we had our own quiet dinner of Yusheng,
which allowed me to bring out the camera for a few shots.
Raw, thinly sliced fresh salmon salad with dressing of Plum Sauce, Sesame Oil, light Soy Sauce and a dash of cognac plus ground spices. Instead of croutons, crunchy shrimp crackers, peanuts and sesame seeds are added to the top.
After all the tossing and “撈起” (lo-hei) cheering for auspicious wishes, the mixed salad is really excellent with dry white wine.
