With so many bananas ripening I decided to bring good old kampong (village) food to the table. Many will already know of the famous Thai Pineapple Rice dish, right? Well this is a slight variation using a tropical fruit which is in season.
I use bananas which are ripe but not super soft ripe for cooking and baking. 1 banana for each portion/serving.
Then saute onions, beans & whatever vegetables you like with curry powder (made into paste with water added) and get it all fragrant. The add an egg, quick stir, followed by cooked/leftover rice. Stir to mix all thoroughly.
Gently stir in pan for 2 mins and it’s ready to be served. I top/garnish with crushed salted peanuts and brown-fried shallots.
